Simple Almond Cake Recipe

Spare you the huge preamble. Here are the relevant details.

Directions

Preheat oven to 350 Degrees.

Prepare a round 9" pan. I use a spring form pan. Grease Pan sides

Dry bowl: Combine flour, baking powder, salt shredded coconut.

Prepare butter in sauce pan on low low.

Wet bowl: Combine sugar, eggs, vanilla. Add melted unsalted butter slowly while whisking it all together.

Combine wet with dry gently whisk till it all comes together.

Pour mixture into round 9" pan and smooth it out a little.

Cook

Cook for 30 minutes at 350 Degrees F. Internal temp ~204 F. Cool for 1hr.

Ingredients

  • Dry
    • 2 C almond flour
    • 2 t baking powder
    • 1/4 t salt
    • 1/2 C shredded coconut (unsweetened)
  • Wet
    • 1/2 C melted unsalted butter
    • 2/3 C sugar
    • 4 eggs
    • 1 1/2 t vanilla extract(*)
    • 1/4 cup sliced almonds
  • Decoration
    • 2 T powdered sugar (dusting)

(*)You can add other things to wet bowl to give it an interesting flavor. 1/2 t Almond extract, rum, burbon, etc. Small portion, just to get the essence in there…
